This recipe is also out of Mark Sisson's new book, The Keto Reset Diet.  Mark isn't from the south but we are and we can say that he certainly knows how to make some darn good cajun food!!!  This dish is very filling and is loaded with flavor from all of the elements.  From the sausage and liver(don't worry it doesn't taste like liver) to the thyme, oregano, and paprika, this dish seems simple but has quite the complex flavor profile.  We use beef liver instead of chicken liver like the recipe in the book calls for because we are able to source this more readily from a local organic and 100% Grass-Fed Farm.
