As if her Italian recipes weren't good enough, Maria Emmerich impresses even those of us with Texas roots with her Mexican recipes in her Keto Restaurant Favorites Cookbook.  The Chili Verdes Green Sauce recipe is authentic Tex Mex if there ever was one and it takes the chicken thighs to a whole other level of flavor.  And while the "beans" aren't beans, you won't mind one bit!  Bacon makes everything better and it sure makes the fried eggplant "beans" taste out of this world.  This dish is also Nut and Dairy free for those following her 30 Day Keto Cleanse.

Very Good

I really enjoyed this dish. I am always concerned that cauliflower rice or mash will be bland but Ketoned Bodies does a great job of making flavorful dishes. I tried the cauliflower rice on its own before mixing it with the "refried beans" and it had great flavor on its own. The portion size of one chicken thigh was good for me but I can see this being too small of a portion for others. As with all Ketoned Bodies meals, I find the microwave instructions to be WAY off. The chicken thigh was still frozen following their suggesting cook time. Had to cook for twice as long at a higher power level.

Delicious but not enough

This was delicious but I felt I needed another thigh. Very tasty, though. I would recommend it.

Not My Forte

This is 1 of 2 meals I didn't enjoy but not because it didn't taste good but because being of Spanish decent, I am accustomed to a certain flavor when it comes to Spanish Inspired dishes and this did not meat the threshold of what was expected flavor wise. NOT THAT IT WASNT GOOD, just wasn't satisfying on a flavor profile level for me but I have high expectation when it comes to my cultural food.
